Dine, the new restaurant adjacent to the hotel, will be a retro-1940’s American brasserie and martini bar that is destined to become a popular dining destination. Dine, scheduled to open on December 2, was designed by Robert Polacek of Puccini Group.

Dine, presenting an exciting 1940’s inspired décor and serving exceptional food with moderate pricing, will be a favorite choice for a business meal as well as personal dining. The restaurant was conceived to serve the needs of the young, dynamic and sophisticated residents of the West Loop area. Its open seven days a week, serving breakfast, lunch and dinner in stylish, relaxed in and outdoor (whether permitting) settings.

The chef is the versatile and talented Trevor Hoyte, 31, who trained under Chicago chefs Rick Tramonto at 4-star Tru and Rick Gresh at 3-star Caliterra restaurants.

Chicago’s most promising new restaurant, Dine, 733 W. Madison, Chicago, features rising star chef Trevor Hoyte, 31.

Seats 132 in its main dining room and 78 seats in the lounge-bar, the a 1940s retro American-style eatery and Martini bar “takes liberty with the idea of retro,” says Hoyte, “a foundation allowing us to offer stylized comfort food with contemporary twists.”

People who know Hoyte’s cuisine know that he likes to push the culinary envelope. But he does so with style and good taste. “We’re going to have fun with Dine. It will have great appeal to a variety of customers—and that’s a perfect scenario,” he says.
